5-minute soup...ok, maybe 15
Large pot...bring 4-6 cups water to boil...add 1 1/2 cups slow-cook rice and cook til 95% done.
(If your family is not picky, you can add cut up carrots, onions, celery at this point)
Add 1 packet taco seasoning, 1 can corn, 1 can chicken, and 1 can black beans.
If you're concerned with salt, you can drain and rinse or just throw it all in.
I usually drain and rinse the black beans.
Cook for 5 minutes or so and then turn off the heat or you'll overcook the rice and end up with jambalaya!
