Homemade Granola Bars
see 3/20/12 pictorial tutorial...
In a 9x13 pan or a cookie sheet with sides - 4 cups oats
a handful of each - sliced almonds, coconut, wheat germ, ground flax seeds
toast at 350 for 20 minutes til lightly browned - let cool
(I often do this step a day or two ahead)
In small pot on stove - 1 stick butter
1/2 c. honey and 1/2 c. brown sugar
bring to a boil and cook it for 5 minutes or so
turn off heat and add 1/2 tsp. vanilla and 1/2 tsp. baking soda
pour over toasted mixture and stir well
at this point you could mix in 1/2 c. butterscotch chips, they will start to melt
press into a different 9x13 which is lined with foil
press mini chocolate chips onto the top
let cool & slice into bars or squares
wrap each in saran wrap or a baggie
keep in frig - careful when eating them from the frig, they are hard
Homemade Dog Treats
2 cups whole wheat flour
1 Tbsp. baking powder
1 cup peanut butter (chunky or smooth)
1 cup milk
Mix well, roll out to 1/4 inch thich between two sheets of waxed paper.
Cut out cookies.  Bake on parchment lined cookie sheet at 375 for 20 minutes or until light brown.
These cookies don't spread, so you can fill up the cookie sheet.
I like to make tiny treats for my puppy dog, because he gets one every time he goes outside.
This recipe can easily be cut in half.  I store them in a ziploc.
