Instant Pot Class

Breakfast


Steel Cut Oats -1:2ratio of oats to water 4HI NPR
1:4ratio if you like them a bit runnier
Can add non-dairy milk, but regular milk will burn??
add apples, craisins, nuts, cinnamon
When done, add more extras, milk, brown sugar
Keep in fridge in containers for several days.
Egg Casserole - Saute meat, onion 
Put in well sprayed pan and top with cheese
Mix eggs & spices and pour over
10eggs 2/3c milk 8” pan - 12HI NPR 10 minutes 
(I did 10eggs+2/3c water in a 7” pyrex)
soak up water on top w/paper towel
Potatoes - Dice up potatoes (add onions and peppers)
Sautein neutral flavored oil stir frequently to avoid sticking 
Add spices halfway through sauteing
Add water (3/4c to 2 lbs. potatoes) (don’t mix) came out with liquid
1HI QPR if eating now 1LOW QPR if prepping ahead (1 week in fridge)

Use the eggs and potatoes to make breakfast burritos - add hot sauce to spice it up. Could make them all up and freeze them or make and eat throughout the week.

French Toast Casserole Spray pan Layer cubed frenchtoast, 
brown sugar,  cream cheese(microwave it so you can spread it) (or use a mix of almond butter, maple syrup, & cinn)
Top each pan with 3 eggs mixed with ¼ c. milk 1T sugar, cinnamon
Dot with butter pats, nuts
25HI 5NPR minutes 2 6” square pans covered w/foil - delish!
Great leftover with pancake syrup

Miscellaneous

Hard Boiled Eggs 6HI 5-10NPR then rinse under cold water
If they're too done for you, try 5HI or 4HI
White (not quick cook) Rice - 1:1 rice to water - 4HI 10NPR
hint - add 1tsp. oil and a dash of salt
minimum 1c. rice, or use pot in pot
Brown Rice - 1:1 rice to water - 22HI 10NPR

Corn2HI NPR - ok to sit in closed pot til ready to serve
Baked Potatoes 8HI NPR (more if bigger)

Chicken

Chicken Caesar Salad Wraps
Cube 2lbs. Chicken breasts-season & saute 5 min. in olive oil 
½c. broth 4oz. Cream chs ¼ c. fresh parm 2/3c.caesardressing
DO NOT STIR –15HI QPR
Serve as wraps with bacon & lettuce or on top of rice
Crack Chicken
Cook chicken, shred, add cream cheese, ranch powder, cooked bacon, cheddar cheese - good as a pasta too
Chicken Taco Bowls (think Qdoba)
Spray instant pot
1/2c. Broth, 2 chicken breasts, cover with taco spice
Cover with black beans, 1 c. frozen corn, 1 1/2c. salsa, 
1 1/4c. uncooked white rice
Add additional 1c. Broth
8HI (10if using frozen chicken) 12NPR 
fluff rice gently, remove chicken to shred (put lid back on)
If rice is too done, next time cut chicken smaller and try 6HI
Serve as nachos, wraps, salads with all the toppings

Ground Beef/Pasta

Meat Loaf 1lb. Ground beef 1/4c. each(Bread crumbs, oats, catsup, milk) 1 egg
Add spice, onion, etc. to taste  25HI QPR (not a must)
  Make an extra to freeze.
Put the frozen loaf on a trivet on top of diced potatoes + 1c. water 10HI QPR
 Remove meat loaf and make mashed potatoes 
*secret sauce is equal amounts catsup & brown sugar + a bit of yellow mustard
Hamburger Helper-Brown 1 lb. meat
Pour in 16oz. Pasta, 4c. water 4c. sauce (jar or homemade)
5HI QPR add 8oz. Ricotta or cottage or cream cheese mixed w/1 egg (4oz. is plenty - save the calories)
Add 4oz. shredded mozzarella and stir
Optpour into pan, add 4oz. Shredded mozzarella, broil 2-3 minutes  
Spaghetti Sauce
Brown 1 lb. ground beef with onion
Drain fat if necessary
Add 6 small cans tomato sauce 2 cans paste 1 can tomatoes
Plus water to rinse all ½ c. spice mix + ½ c. sugar (or substitute)
10HI 10NPR - burn message?
To make quick spaghetti, break spaghetti and place in pot in different directions, cover with water (dash of oil optional)
dump sauce on water or put in a separate bowl on trivet
Quick lasagna - layer sauce, raviolis (meat or cheese-can be frozen)
In lieu of ricotta or cottage cheese, try 8oz. cream cheese mixed with 2 eggs
Mac n CheesePour in 16oz. Pasta, 4c. Chicken broth 
2Tbsp. Butter Optional 1Tbsp. Dijon & 3-4 dashes Hot sauce s&p garlic powder
4HI QPR Add shredded cheese, any kind (3cups)
plus 1/2-to 1 c. milk stir to melt

Beef

Basic Roast-2.5 lb. chuck roast seasoned/saute in olive oil 5 min 
deglaze well with ½ c. beef broth - don't skip this!
Add braising vegis - garlic onion celery carrots + packet of onion soup mix 2 Tbsp. worcestshire tomatoes and/or tomato sauce
(1 1/2c. Liquid total) 45HI 10NPR
When done, add potatoes carrots onion  6HI 10NPR
Remove meat and vegisto make gravy on saute
Mississippi Pot Roast
2.5-3  lb. chuck roast cut in to 2” slabs pat dry w paper towel
saute in olive oil 5 min per side without moving
Remove meat and deglaze with c. beef broth 
add 5-10 pepperoncinis 1oz. Ranch mix packet and 
1oz. au jus or brown gravy mix + 6Tbsp. butter
Add meat back 60HI 15NPR
Remove meat, make gravy, shred meat and add back in
Make ahead and chill fat will rise to the top
Turn the leftover juice into soup

Pork

Pork Tenderloin sit out 15 minutes, coat with oil and rub, 
pepper medley
Saute to brown/cancel & remove /deglaze
1/2Tbsp. Worcestershire & 1tsp. liquid smoke 
3HI 12-15NPR
Let set 5 minutes before slicing
Make gravy
Baby back RIBS (3.5lbs) let sit out 15 minutes,remove membrane, oil, rub, 1c. Water 1/2c. Apple cider vinegar 1/4tsp. Liquid smoke
Place ribs on trivet meat side facing out
25HI (35for 7lbs-make sure they fit)  10NPR (add 5 min for spare ribs)
Add bbq sauce and broil 5 min
Or cover with sauce and foil and put in oven at 300 for an hour
Make a couple racks the day before and heat them in the oven

Soup

Chicken Noodle Soupadd spice at each ‘layer’
Dice chicken, season, saute with carrots, garlic, onion, celery in olive oil or butter
Or start with vegis and add whole chicken pieces 8HI QPR
Remove chicken and shred return to pot with more broth and noodles, 3HI QPR
If using egg noodles, just cook them on saute
Minestrone don’t forget the spice
Brown ground beef on high saute, add garlic, onions, carrots, celery
Season and Deglaze pot with broth
Add broth, potatoes (diced small) pasta 2HI QPR
canned tomatoes, beans, corn, green beans at end
0HI QPR
or slow cook til dinner time

Make Ahead

Cajun Rice and Sausage/cajun pasta/red beans and rice soup
Cajun sausage (and/or chicken) onion carrots celery 
freeze flat in a ziplocfor up to 3 months
Thaw overnite - add 1 can rinsed beans 1 can tomatoes 
want more soup? add more cans and water
1c. rice (not quick cook) 1c.broth & Cajun seasoning
3HI 15NPR fluff rice

To make soup, add extra liquid
For cajun chicken pasta, saute diced chicken peppers onions in pot til cooked through - Save at this point if meal prepping
Cook pasta 4HI QPR dump some liquid if there’s a lot left
Add chicken peppers onions ½ stick of butter ½ block of cream cheese ¼ c. parmesan 1 c. milk and more spice
(My sauce is usually twice the butter, cream cheese, etc. so using the liquid saves some calories)
Tony Chachere's creole seasoning
Saute on low and stir til combined or until it's not too runny

Red Beans Saute cajun sausage onion garlic celery
Add cajun spice, hot sauce, rinsed beans & canned tomatoes
0HI QPR serve over rice

Dessert - (tuna cans are the perfect size)
Please do your own research regarding BPA in cans

Lava Cake 
1/2c. butter 1c. Choc. Chips melt in microwave
Add in 1c. Powdered sugar 
3 eggs 1 yolk 1Tbsp. Vanilla 6Tbs. Flour
Spray containers cover with foil
9HI QPR
Peanut butter version put some halfway while filling containers
4Tbsp. PB 1Tbsp. Butter 2Tbsp. Powdered sugar
If it's not gooey enough, try 6HI QPR
Quick Apple crisp 
Slice apple in containers cover with a quick crisp topping
Dot with butter add cinnamon and nuts cover with foil

3/4c. Oats 1/4c. Brown sugar1/4c. Flour cinnamon, nutmeg, nuts
In class I cooked the bigger dish for 10HI QPR

College for Kids 2019
Recipes for today
Wilton Sugar Cookie
1 c. butter
1 c. sugar
1 tsp. vanilla
1 egg
2 tsp. baking powder
3 c. flour
This recipe is best mixed in a KitchenAidmixer 
    a hand mixer is not strong enough
This recipe makes about 3 dozen 3” cookies
Increase or change the flavoring to your taste
The dough does not need to be refrigerated before using
If you are making large or intricate cookies, you may find it
    easier to refrigerate the dough for an hour
You may need/want to add extra flour
Bake 350 for 10-11 min 375 8-9 minutes
Rotate trays halfway through baking
Glace Frosting
2lb. powdered sugar
½ c. water + extra if needed
¼ c. corn syrup  
1 tsp. clear extract of choice

I use clear butter flavoring
Make your frosting a bit thicker until you get more comfortable working with it
This frosting dries hard to the touch and soft to the bite
It takes a full 24 hours to get completely dry
Small Batch Royal Icing
2 Tbsp. Meringue powder
¼ c. water
Mix well
Add 2 c. powdered sugar
1 tsp. clear flavoring
Mix on low for 7 minutes
Royal icing can be refrigerated but it tends to separate, so it needs to be mixed well prior to using
Keep a pin handy if using very small tips in case they get clogged

Spicy Garlic Ranch Pretzels
You need:
1 16oz. bag of small pretzels - a healthy squirt or approx. 1/3cup
Orville Redenbacher butter flavored popcorn oil
1oz. packet of powder ranch salad dressing/seasoning - use half
Garlic salt - 1tsp. or to taste
RedHot powder spice - 1tsp. or to taste
Black pepper - to taste

Mix well, add pretzels, toss to coat all
Bake at 250 for 15 minutes
Toss again
Turn off oven
Place pretzels back into oven to cool
Place back in pretzel bag
Enjoy!
