College for Kids - Wednesday 8/12
Cream Cheese Truffles
Cream Cheese Truffles
Melt 1 c. chocolate chips
add and mix well 4 oz. cream cheese, 1/8 c. cocoa powder, 1/4* c. powdered sugar
we added 1 c. powdered sugar - maybe because the cream cheese was low fat?
we did not have access to a refrigerator, but it would be easier if you could put them in the frig for
a few minutes before rolling into small balls and rolling in your favorite toppings.

College for Kids - Tuesday 8/11 Sand Pudding Recipe |
Crush in food processor: |
1 pkg Vanilla Wafers |
1 Oreos |
Mix til smooth: |
8 oz Cream Cheese |
¼ C Butter |
⅔ C powdered sugar |
2 small pkgs French Vanilla instant pudding mix |
whisk together in a separate bowl: |
2¾ C Milk |
12 oz Cool Whip |
add cool whip and fold into first mixture |
Layer in this order: sand, pudding, sand, pudding, sand |

1/4 c. softened butter
3 1/4 c. powdered sugar
1/3 c. sweetened condensed milk
1/2 tsp. peppermint extract
-beat butter til fluffy
-add sugar and milk (dough will look crumbly)
- divide the dough into as many bowls as colors you want
- work in a dab of gel color
- roll into rope and cut into pieces
-let dry a few hours
these mints will last in the frig for a few weeks
